ТРАДИЦИОННЫЕ БЛЮДА В СИСТЕМЕ ПИТАНИЯ АЗЕРБАЙДЖАНЦЕВ

Аннотация

Статья посвящена традиционной системе питания азербайджанцев. В ней рассмотрены технология приготовления национальных блюд, место последних в повседневном питании и ритуальных трапезах азербайджанцев. Отмечено, что в современном Азербайджане некоторые правила традиционной культуры питания, этикета, в частности при приеме национальных блюд и напитков, соблюдаются главным образом в семейном быту. В наши дни национальные блюда по-прежнему употребляются в повседневных и торжественных трапезах. В Мил-Муганском и Ширванском районах Азербайджана застольные молитвы читаются до и после завтрака, обеда и ужина. Правила этикета предусматривают особую заботу и внимание к гостю, старейшине, главе семьи, детям. На обед и ужин для гостя специально готовят кебаб, калафур, плов, долму, бозартму и др. Такие же национальные блюда подавались в Праздник Мавлид (в честь рождения Пророка Мухаммеда) в Мил-Муганском и Ширванском районах Азербайджана. Полезные, целебные свойства пищи используются в народной медицине. Обращено внимание на специфику торжественных трапез в зависимости от целей церемоний (траур, свадьба (помолвка), семейные торжества и народные праздники), а также на состав блюд, тонкости технологии их приготовления для большого числа людей.  Обширный ассортимент повседневных, праздничных и церемониальных блюд, степень совершенства правил приготовления, традиционных правил застольного этикета подтверждают богатство культуры питания азербайджанцев.
